Cinnamon Apples

In the spirit of the upcoming holiday, I'm going to profess my love... for apples. There are so many kinds of apples available now, it's mind-boggling. I prefer a crisp, tart apple and I love to eat them just as they are, although I am not one of the people who eats the *entire* apple. (See this interesting podcast) Sometimes, though, my apples get lonely and call for their own true love: cinnamon. So here is a quick recipe for cinnamon glazed apples that you can serve over yogurt and your favorite granola, plop in the middle of a pancake, or eat straight out of the pan.

1 Tbsp butter

1 apple, cored and thinly sliced

1 Tbsp sugar

1 tsp ground cinnamon

Melt the butter in a pan over medium heat. Stir together the cinnamon and sugar and dip or sprinkle on to the apple slices. Add the apple slices to the pan, and cook for a few minutes until the sugar caramelizes. Flip the slices and cook a few minutes more. Remove the slices from the pan and drip any remaining cinnamon-sugar goodness over top. Enjoy!
