Cucumber Apple Ice

Last year, I pickled quarts and quarts of cucumbers, and was sure that I had almost turned *myself* into a pickle! So, I was on the lookout for a different way to use cucumbers. I love the idea of an icy cold granita but was never patient enough to do the process of freezing and scraping. Then I came across method where the cucumber just gets blitzed in the food processor with ice: genius! I added an apple for some sweetness and fresh mint for flavor. If it’s not sweet enough for you, add a bit of honey. Perfect on a hot sweaty day!

1 cucumber, peeled and seeded

1 apple, peeled and cored (I used Gold Rush)

5-6 fresh mint leaves

12 standard-sized ice cubes 

In a food processor, pulse the cucumber, apple, and mint until chopped. With the motor running, add the ice cubes one at a time and process until combined and icy. Serve immediately.
